In a small bowl, bloom gelatin by adding it to 1/2 cup of cold water. Let sit for 5 minutes.
Heat the remaining 1/2 cup of water until steaming but not boiling.
Pour hot water over the bloomed gelatin. Whisk until fully dissolved.
Stir in lemon juice (or ACV), pink salt, and sweetener if using.
Pour the mixture into small jars or silicone molds.
Chill in the fridge for at least 2 hours or until set.
Eat 1 serving (about 1/2 cup) 10–15 minutes before meals to curb appetite.
