Ingredients

  • 2 cups cooked chicken, shredded or diced
  • 2 cups cooked white rice
  • 2 cups broccoli florets, lightly steamed
  • 1 can cream of chicken soup (10.5 oz)
  • 1/2 cup milk
  • 1 cup shredded cheddar cheese
  • 1/2 cup additional shredded cheddar cheese for topping
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  • Preheat the oven to 375°F (190°C) and lightly grease a 9×13-inch casserole dish.
  • Cook the rice according to package instructions if it has not already been prepared.
  • Lightly steam the broccoli florets until slightly tender but still bright green.
  • In a large bowl combine cooked chicken, cooked rice, steamed broccoli, cream of chicken soup, milk, garlic powder, onion powder, salt, and black pepper.
  • Stir in one cup of shredded cheddar cheese and mix until evenly combined.
  • Transfer the mixture to the prepared baking dish and spread it evenly.
  • Sprinkle the remaining shredded cheddar cheese evenly over the top of the casserole.
  • Bake the casserole for 30–35 minutes until the cheese melts and the casserole becomes hot and bubbly.
  • Remove from the oven and allow the casserole to rest for about 5 minutes before serving.

Notes

Use rotisserie chicken to save time and add extra flavor. Cook the rice fully before mixing it into the casserole so it absorbs the sauce properly while baking. Lightly steam the broccoli so it stays tender but not mushy in the finished dish. For extra flavor, add garlic powder, onion powder, or a pinch of paprika. Let the casserole rest for about 5 minutes before serving so the layers set.
