Ingredients

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 10 oz diced tomatoes with green chiles (drained slightly)
  • 1 cup sour cream
  • 10.5 oz cream of chicken or mushroom soup
  • 2 cups shredded cheddar or Mexican blend cheese
  • 9 oz bag Nacho Cheese Doritos chips, lightly crushed
  • 1/2 cup corn kernels (optional)
  • 1/2 cup black beans, drained (optional)

Instructions

  • Preheat the oven to 350°F (175°C). Lightly grease a 9×13-inch casserole dish.
  • In a large skillet over medium heat, cook the ground beef until browned. Drain excess grease.
  • Add taco seasoning and diced tomatoes with green chiles to the skillet. Stir well and simmer for 3–4 minutes to combine flavors.
  • In a bowl combine sour cream, cream soup, and about 1/2 cup shredded cheese. Stir until smooth to create the creamy mixture.
  • Spread a layer of crushed Doritos across the bottom of the casserole dish.
  • Spoon half of the beef mixture over the Doritos layer, then spread half of the creamy sauce mixture on top.
  • Repeat with another layer of Doritos, remaining beef mixture, and remaining sauce mixture.
  • Sprinkle the remaining shredded cheese evenly over the top.
  • Bake uncovered for 25–30 minutes until the cheese melts and the casserole is bubbly around the edges.
  • Let the casserole rest for about 5 minutes before serving so the layers set and slice cleanly.

Notes

Use large crushed Doritos pieces instead of finely crushed chips so the casserole keeps some texture after baking. Rotisserie chicken can replace ground beef for a lighter version. For extra flavor, add corn, black beans, or diced bell peppers to the filling. Allow the casserole to rest for about 5 minutes before serving so the layers set properly.
